Your dad was really wanting something sweet to stack on so today I made muffins. This recipe was adapted from the Happy Herbivore website. I used cupcake papers and did not spray them with oil. While the muffin did not peel out smooth it was still easy to eat and remove what little crumbs that stuck to the paper. I did not have whole wheat pastry flour so I substituted half whole wheat and half unbleached. Which is why it needed a few tablespoons of water to make the consistency a little more spoonable. Also cut out some of the sugar (they were plenty sweet) and grated a small apple on the big cheese grater. I will make this again and use some of the zucchini I have in the freezer. Here is the recipe the way I made it.
Ingredients:
3/4 cup whole wheat flour
3/4 cup unbleached flour
1/2 cup old fashioned rolled oats
2 teaspoons baking powder
1 teaspoon baking soda
1/4 cup raw sugar
2 teaspoons cinnamon
1/4 teaspoon ground ginger
a dash of nutmeg
1/4 teaspoon salt
1 cup unsweetened applesauce
1 cup (small) apple, shredded
1/4 cup pure maple syrup
Preheat oven to 350 F. Grease muffin tin or spray paper liners to prevent sticking and set aside. In a large bowl, whisk flour, oats, baking soda, baking powder, salt and spices together until well combined. Add applesauce, sugar and maple, then stir until almost combined. add apples, stirring until just combined. Spoon into muffin cups 3/4 full. Sprinkle additional oats over top if desired. Bake about 18 minutes, or until a toothpick inserted in the center comes out clean.
