We needed something quick for supper this evening and wanted tacos. Toby wanted to help out in the kitchen and this is what we came up with.
In a nonstick skillet, sauté onion, red pepper and garlic in oil until tender. Stir in the beans, tomatoes, pepper and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 3-5 minutes or until mixture begins to thicken. Spoon about 1/4= 1/3 cup off center on each tortilla/. Fold one side of tortilla over filling. Top with avocado and lettuce. Serves: 4 adults
The original recipe called for black beans but we did not have any and used pintos instead. We loved it. I had two different brands and definitely like the La Costena (10.75 oz) brand the best. Not a favorite, the RanchStyle brand pintos.
