Ingredients:
1 med onion, diced
½ yellow bel pepper, diced
1 lg can black beans, rinsed and drained
1 cup mild green chilies, diced
1 can fire roasted tomatoes, undrained
½ tsp garlic powder
Salt to taste
Optional:
1 cup frozen corn
¼ tsp roasted coriander
Red pepper or Chipotle sauce
Directions:
Sauté onion and pepper in a little water until tender.
Add remaining ingredients. Heat to a simmer until flavors are blended. If mixture begins to dry out add a little water or vegetable broth. Beans should be moist and spoonable.
Serve over baked potatoes, rice, quinoa, or polenta.
